Snack Time! 7 Unique Healthy Snacks I Love

Hungry lately? Me too! Whether you’re stuck inside bored and finding yourself heading to the pantry more frequently or just plain STUCK when it comes to what to eat during snack time, I’m here to help! While these snacks may require a little more muscle and TSIK (time spent in kitchen) they’re worth the wait and your stomach and brain (did you know high quality foods nourish the brain and protect it from oxidative stress and disease? ) will be thanking you! Here are my top 7 snacks that are equally satisfying as they are healthy.

1) Stacked Triscuit Crackers

My stacked triscuit crackers are the only thing on this list out of a box and a little more mainstream, in fact you can actually find this sort of recipe on the back of the box. Rather than aimlessly munching on crackers, Triscuit stacks are a bit more satisfying and filling. What are they? Triscuit crackers stacked with your favorite healthy things. How you do the stacking is entirely up to you, so long as you keep it healthy! My favorite stack is made my spreading low fat ricotta cheese on top of a triscuit, adding a few blueberries and drizzling honey on top of 5-6 crackers for a mid afternoon treat.

2) Barbecue Chickpeas

Swap out barbecue chips for barbecue roasted chickpeas. While you may not get as much of a crunch, these savory bites are packed with more protein, fiber and punch than a bag of chips. See recipe here!

3) Veggies with Guacamole

Grab any of the veggies you have in the fridge and make an at home veggie platter. Presentation is key here, as I find myself enjoying veggies more when I set them up with some sort of dip. Save the calories on a ranch dip and make your own guac for dipping. See my recipe below!

  • 1 avocado

  • 1/2 lemon

  • 1/4 tsp cayenne (if you like it hot)

  • Himalayan pink salt and cracked pepper to taste

Oatmeal with Cinnamon Apples

Who says oatmeal is only for breakfast? While this may be a more filling “snack’ it’s packed with fiber and really fills you up. Make a half cup of oatmeal on the stove and while it’s cooking sauté cubed apples in coconut oil with cinnamon until soft. If you like your oats a little sweeter add a drizzle of pure maple syrup on top.

Thai Cucumbers

My mom use to make an easy version of this when I was a kid! I suppose if you don’t like cucumbers you’re sh*t out of luck with this one but give it a try you never know you may just like it!

  • 2 large cucumbers

  • 1/3 cup rice vinegar 

  • 1/2 tsp toasted sesame oil 

  • 1/4 to 1/2 tsp red pepper flakes 

  • 1/2 tsp salt 

*if you don’t have sesame oil or rice vinegar apple cider vinegar is a good substitute.

Popcorn with Nutritional Yeast

You’ve probably heard of all the ways you can utilize nutritional yeast but have you ever tried sprinkling it on your popcorn? Try to use a microwaveable low cal popcorn that doesn’t have any added butter, then sprinkle nutritional yeast on top and mix!

Cinnamon Sweet Potatoes

My college besties got me an air fryer off my registry and it’s my new favorite kitchen appliance! Chop up sweet potatoes and add them to your air fryer with cinnamon. This also works with baking them in the oven. Click here for my air fryer.
